Why do some rows say “private”?
macOS doesn’t share some figures with App Store apps.
macOS doesn’t share memory and processing figures for processes that run as other accounts (most parts of macOS) with apps from the App Store. Procession still names and explains them, and shows private where a figure would be. Activity Monitor, which is part of macOS, can see them: use Show in Activity Monitor.
